Our kitchen is being redone and we've got a makeshift one in the basement. We have a borrowed instapot. Anyone got any veggie meals they love making with one?
@a I don't know how much space you have to work with (and have not used an instapot), but you can never go wrong with a combo like zucchini, mushrooms, onion, and bell pepper + seasonings of choice over rice. Diced tomato can be a nice addition to that. I use the same vegetable combo in a tomato-based sauce for pasta too.
@a "Marinara" sauce loaded with veggies was what I made a lot of in my tiny little apartment while in college. I'd make a crockpot of that stuff on a Saturday and then make pasta as-needed throughout the week to go with it.
